鬍鬚張的由來要追溯到民國四十九年（西元一九六○年），民生西路口的一個賣魯肉飯的攤子。由於味道好、口味佳、真材實料，所以好口碑帶來了極佳的生意。鬍鬚張的創始人張炎泉先生，因為長期忙碌平均一天的睡眠時大約三至四小時，實在挪不出時間來整理他那和生意同樣茂盛的鬍子，而久之親近的老顧客就膩稱他為「鬍鬚張」，因此「鬍鬚張」之名從此就不脛而走，倒和他魯肉飯同樣有名，於是魯肉飯和鬍鬚張成了不可分別的註冊商標。以「傳承美食，追求幸福」為創業初衷，享譽國際台灣美食第一代表「魯肉飯」，香而不膩，入口即化，台灣本色，一碗入魂。
